Wild fennel is abundant in the region of Tuscany. There is a famous legend where a thief was thought to have stolen a salami from a market in the country. He hid the salami in a wild fennel bush and that evening, upon retrieving it, the fennel had infused with the salami creating a taste that was ‘fit for the gods’. Continuing this tradition, fennel is infused into this salami recreating the old world taste that is so sought after.
